The working group focuses on interdisciplinary research and development of innovative approaches in the field of natural product research. Our work focuses on the identification and characterization of bioactive substances, especially from natural sources such as grapes and wine. We investigate the complex chemical and sensory properties of these substances in order to unlock their potential for sustainable applications in wine production, medicine and materials science. We use modern analytical methods, including metabolomics, to develop precise and efficient solutions that benefit both science and industry. Our research is characterized by an interdisciplinary approach that combines chemistry, biotechnology, viticulture and materials science to break new ground in natural product research and sustainable technology development.
